Milk in Japan is really tasty. When you first drink it, it has a tiny bit of sour taste. Then overwhelmed by the richness. There is a sweet aftertaste. Each milk's aftertaste is different. In winter the milk has even more fat. Love it...Although I'm lactose intolerant.

Food is a time machine
Recently I thought about why chefs insisting the most authentic (old) way of making specific dishes. I think there are several reasons: Delicious, Unique taste, Cultural, Better way of utilizing ingredient, etc.
But one aspect I think is the ability to do time travel. People grow, get older, changed. But when you taste the food you used to have. It brings you memories back. You can reflect on your past while eating the food.
